My answer would also be HIStory. And I feel it is a doggone crime that Bruce Swedien has not even been mentioned yet in this thread! The man’s instrumental for the soundscapes we’ve come to expect from Michael Jackson.

And when it comes to production, Michael Jackson fans are severely spoiled. Really, you can’t go wrong with any of his Epic albums (and the Motown albums are top-notch, too).
